Detra Denay Davis of Charlotte Pie Authority has shared this delicious dessert recipe with us. Enjoy creating and tasting one of her most popular pies, the Cranberry Apple Pie with Crisp Oat Topping.
INGREDIENTS:
1/2 cup salted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup granulated sugar
1/2 cup packed light brown sugar
6 Granny Smith apples – peeled, cored and sliced
2 cups fresh cranberries
METHOD:
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, granulated sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer 2 minutes. Pour cranberries and apples, in sugar mixture and continue simmering for 5-6 minutes. Cranberries will start to pop. Turn off heat and allow to mixture to sit for 10 minutes. Pour cranberry and apple mixture into crust. Gently top with apple crisp. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until cranberries bubble and apples are soft.
CRISP TOPPING INGREDIENTS:
1 cup brown sugar
¼ cup granulated sugar
3/4 cup old-fashioned oats
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 cup cold butter (salted)
METHOD:
Mix granulated and brown sugars, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the cranberries and apples to the edges of the pie pan. Pat the topping gently until even. Bake and enjoy.
