Fish No. 2
We know, we know—the name’s cheesy, but so is this decadent, black-as-night sophomore addition to our Feast of Seven Fishes list. Our Murder Ink is New Zealand green lip mussels, squid ink pasta, and shaved pecorino Toscano. Fish dish number two is criminally good.
INGREDIENTS:
1/2 lb Squid Ink Fettucine
1 lb Fresh Mussels
1 cup white wine
1 ea. shallot, chopped fine
2 cloves garlic, chopped fine
2 tbsp olive oil
1 tbsp butter
1/2 cup clam juice
1 tbsp sliced chives
1/2 cup grated pecorino cheese
Kosher salt & pepper to taste
METHOD:
Saute the shallots and garlic in the olive oil over medium heat until translucent, 2-3 minutes.
Add in the white wine and reduce by half. Add in the clam juice and bring to a simmer.
Add in the fettucine and mussels and cover the pot. Cook for 4-5 minutes, covered, until the mussels open and the pasta is cooked al dente.
