This creamy delight is elegant, delicious, and above all, easy to make. Bring incredible Harper’s Sweet Potato Soup home!
3 medium sweet potatoes
1 cup diced yellow onion
1 stalk celery
1 clove fresh garlic
2 cups chicken stock
2 cups half and half
1 tsp nutmeg
2 tbsp butter
3 tbsp maple syrup
Celery leaves and cinnamon for garnish
Melt the butter in a large, heavy-bottomed pot over medium-high heat. Add the chopped onion and sauté for about 5 minutes. Add chopped celery stalks, sauté about 5 minutes. Add garlic and sauté 2 minutes.
Add sweet potatoes, chicken stock, and nutmeg; bring to a boil. Reduce heat and simmer uncovered until potatoes are tender, about 20 minutes.
Working in batches, puree soup in blender until smooth. Return to pot.
Add half and half and maple syrup and stir over medium-low heat to heat through. Season with salt and pepper to taste. Ladle into bowls.
Sprinkle with celery leaves and dust with cinnamon. (This can be prepared one day ahead of time. Cool soup slightly. Cover and refrigerate soup and celery leaves separately.)
