You’d better like coconut if you plan to reach for one of these. Freelance chef and Johnson & Wales University instructor Mike Pappas combines an extremely coconutty dough with a rich raspberry filling in a cookie that’s as holiday appropriate in shape as it is in flavor. They’re snowball-esque, but these things aren’t your traditionally fluffy coconut treat. They’re heavier, cookier, and they pack a wallop. And they are oh-so-dangerously bite-sized.
