Vine American's Deep Dish Key Lime Pie

Vine American’s Key Lime Pie is without a doubt one of the tastiest in the city.

•  1/2lb of Graham Cracker Crumbs
•  1/4 lb of whole butter, melted
•  1 cup egg yolk
•  1 cup key lime juice
•  2 1/2 cups of sweetened con-densed milk

Additional ingredients for step# 2:
•  1 1/4 lb of cream cheese
•  1/4 cup of key lime juice
•  1 tsp of vanilla extract

Directions for deep dish key lime pie: Combine all ingredients and mix well. Beat yolks until smooth and add condensed milk and the key lime juice. Pour mixture into 8” cake pan. Cover with foil. Bake for 50 minutes at 325 degrees and then cool for 30 minutes. Step #2: Cream cheese, lime juice, and vanilla extract should all be at room temperature. Blend into pie and chill.

Raspberry Sauce

• 1 1/4 lbs. raspberries, frozen
• 1 1/2 cups sugar
• 1/8 cup lemon Juice
• 1/4 cup cornstarch
• 2 cups water/cold

Directions for raspberry sauce: Combine all incredients in heavy sauce pan or steam kettle. Bring mixture to a boil and simmer until sauce thickens. Strain and cool properly. Cover and store in refrigerator until ready to use.

Whipped Cream
• 1 qt. heavy cream
• 1/2 cup powdered sugar
• 1 tsp. pure vanilla extact

Directions for whipped cream: In a pre-chilled bowl of a small mixer, place the cream and whip on high until it forms soft peaks. When the cream froms soft peaks, gradually add the sugar and the vanilla extract while whipping. Continue to whip until the cream reaches stiff peaks. Cover and refrigerate until you are ready to use.
